The chains have many branches. The conditions that mold thrive in are not good for yeasts orbacteria. They reproduce by the presence of green or black mass on the hyphae.

Most foods, equipment, and building surfaces have small amounts of nutrition and humidity. Most foods have more yeasts and molds than bacteria. The conditions of low pH, temperature, and high salt or sugar are unfavorable to the bacteria.
